The Bovine Pancreatic Trypsin Inhibitor (BPTI) is a monomeric globular polypeptide containing 58 amino acid residues and three disulfide bonds (Cys5-Cys55, Cys14-Cys38 and Cys30-Cys51). This peptide inhibits protease activity of enzymes such as trypsin, kallikrein, chymotrypsin, and plasmin. BPTI belongs to the Kunitz inhibitor family (a subset of the serine protease inhibitors).

It is one of the most thoroughly studied proteins in terms of structure and folding pathway. Nevertheless, its physiological function remains unknown.
