The bloater (Coregonus hoyi) is a freshwater fish native to the Great Lakes. It is silver in color with a pink and purple iridescence and reaches an average length of 9 inches (23cm).
In British cuisine, the bloater is a type of kipper, where the herring has been smoked whole, with its innards intact. According to George Orwell in The Road to Wigan Pier, the Emperor Charles V erected a statue to the inventor of bloaters.
