Lobster Thermidor is a French dish consisting of a creamy, cheesy mixture of cooked lobster meat, egg yolks, and brandy or sherry, stuffed into a lobster shell, and optionally served with an oven-browned cheese crust. The sauce must contain mustard (typically powdered mustard) in order to be true to the original recipe and to have the distinctive Thermidor taste.

Lobster Thermidor was created in 1894 by Marie's, a Paris restaurant near the theatre Comedie-Français, to honor the opening of the play Thermidor by Victorien Sardou.[citation needed] Unlike the recipe, the play named for a month of the French Republican Calendar was not a critical success, and is rarely performed.

Due to expensive and extensive preparation involved, Lobster Thermidor, and similar recipes such as Lobster Newberg, remain recipes primarily for special occasions.

[edit] Prominence in Games

Also due to the expensive and extensive nature of the dish, in the game The Sims 2, Lobster Thermidor is the most challenging, but most satisfying, dinner dish that can be prepared, requiring 10 out of 10 cooking skill points. The dish is often referred to in many The Sims 2 forums due to its high filling capacity in the game<ref>"[1]</ref> or most frequently due to many modded oven objects not being compatible with the dish.<ref>"[2]." </ref>
